I walked up the street from where I'm staying, and had a delicious caesar salad and fries from a restaurant called the Newsroom. It was beautiful, and the woman who took care of the table was lovely.
Then I walked up Havover Street, which has some amazing stores, but more amazing restaurants. I'd already eaten, so that last part was useless, though I did pop into a cupcake shop and buy some fudge for tonight when I get back "home". Scratch that,I'll save it for the airport tomorrow!
From there I turned onto Thistle a Street. It's a dangerous street, but not in terms of human beings being harmed, just my wallet. I unfortunately walked into a store called Covet, and they had a necklace that I had no option buy to get. The trick was, I had to ship it home to myself immediately at the post office across the street, for fear that I might change my mind. It's a work of art, it will be displayed in Toronto as such, and I am so excited about it! I will take a picture once I'm back, but it's these flat 3D-looking cubes, the whole shape in a dark hardwood, and the sides in different colour blocks. There are about 20 of these shapes ranging from 1.5" x 1.5" to .5" x .5", they get smaller as the necklace covered your upper-chest and neck. Only 50 have been made, ever.
It is pure perfection.
Anyhow, tracking that badboy like a mother.
While still sitting at a Starbucks, ie. having the use of free wifi, I decided to take a look at my Edinburgh plan, which is a document that some of you were privy to before I headed out. It essentially had the things I would like to do, the locations of those things, any costs associated with them, and the hours that they were open. None of these things were technically scheduled, but they were there as reference, deposing on what my days ended up looking like. I have covered of a ton of things in Edinburgh in just three whole days. Really a lot more than I thought I ever would.
There was just one on the list that I wanted to do, but hadn't. Given that it's my last night in Edinburgh, I decided to go out with an absolute bang.
I took (am currently here) myself to Timberyard. It's a restaurant that I can only describe as the best thing ever in life, always and forever. It's legal to marry a restaurant in Scotland, right? Good.
I am currently in the middle of a 3 hour (they warn you of this when you begin), 8 course tasting menu. I believe I'm expecting the 6th course next, and just finished the another insanely, painfully good course. Here is what the courses are, as stated on the menu, with a few additions:
(Homemade malted sourdough bread with whipped butter and whipped bone marrow)
(Burnt orange homemade soda)
(Coastal oyster, native herbs, lemon and oak oil)
1. Pea, cucumber, truffle, fennel, hazelnut and spelt
2. Cured beef, burnt oak oil, shallots, mustard and buckwheat
3. Langoustine, crab, potato and dill
4. Partridge, pear, celeriac and rowan
5. Bass, smoked mussels, leek and potato
6. Duck, cauliflower, elderberry, cabbage and tarragon
Surprise Course : Sea buckthorn berries, a parfait of jelly and cream with meringue top
7. Strawberry, elderflower, woodruff, biscuit and frozen yoghurt
8. Chocolate, burnt milk, spiced bread crumbs and marshmallow
The issue here folks, is that I can never un-eat what I'm in the middle of eating. It's going to taint every other meal I have. Ever. This food is outrageous, and nothing I have ever eaten has ever come close to how good it is. I'm melting. It tops all of the other things I said were the best things I've ever eaten before. If I were stuck on a desert island, and could only take one thing, it would be the chef from this restaurant. We would eat-like-kings!
I've taken a picture of each course, and will put the best shot with titles below. There are even flowers in some of them. I didn't care if I was supposed to eat them, I did it anyway!
The problem with flavour is that you can't take a picture of it. It only lasts as long as your tastebuds allow. It's this most beautiful thing, and there is no way to save it, you just have to come back and experience it again. This is number one on my list. I will be back, absolutely.
(I'm finishing the copy in this post while still at Timberyard, and realized just now that I arrived here at 5:55pm, and it is now 9:51pm. I'll be paying the cheque in a moment, and will have been here for 4 hours!)

I can't. It's unbelievable, that experience. Dublin, Barcelona, Paris... you've got some work to do!
And that is that, folks, my last night in Edinburgh. I'm on a flight to Dublin, Ireland midday tomorrow, and onto some more exploring. I won't have wifi at the place I'm staying in Dublin, even though it said I would when I booked it (and is 40% of the reason I booked there). The woman, who appears to be quite lovely, said that people were using it so much that it was costing her to have people stay there. I will have access at multiple places around town, so while I will aim to post each day, I can't guarantee it at is point. We'll have to see how the days go, but I shall do my best.
